C.I.E.H Food Safety Course Level 2

Awarding Body: Chartered Institute of Environmental Health (C.I.E.H)

The C.I.E.H Elementary Food Hygiene Certificate is a level two qualification in Food Hygiene, which is nationally recognized in all sectors of the food industry.

The sectors include: Manufacturing and processing, Hotels and Guest Houses, Restaurants and Cafes, Clubs, Delivered Catering and Meals on Wheels, Food on the Move, (Trains, Coaches, Boats and Aero planes), Takeaway and Fast Food Restaurants and Public Houses to name a few...

Food poisoning can be prevented by simple measures. However, major improvements in food safety will only occur when everyone in the food industry has the necessary knowledge and understanding to avoid the hazards and pitfalls involved in food preparation and storage. The course will contribute to making your employees competent in Food Hygiene. The successful application of the knowledge obtained will help you and your food business improve standards and food safety. This will contribute to the employee's awareness of Food Hygiene and ensure your organization is compliant with EU Regulations on the Hygiene of Foodstuffs and The Food Hygiene Regulations 2006.

The course will cover the following key objectives:

  • Introduction to Food Safety including HACCP
  • The Law including Due Diligence
  • Food Safety Hazards
  • The Working Environment including Bacteria and Contamination Threats
  • Temperature control
  • Refrigeration, Chilling and Cold Holding of Food
  • Cooking, Hot Holding and Re-heating of foods
  • Personnel Hygiene and Working Habits of the Food Handler
  • Principles of Safe Food Storage
  • Cleaning Practices
  • Food Premises and Equipment including Construction of Premises, Pest Control and First Aid.

Course Structure and Delivery:

The course will be delivered over a one-day session or three two nights sessions, inclusive of the exam. The format of delivery will be by Elizabeth Strachan the course tutor. The delivery includes course notes, handouts, group exercises and a first principles book of food safety for the candidate's future reference.

Fees: From £75 inclusive of the C.l.EH Food Safety Level 2 certificate.
